Healthy fruit cake

Hello everyone!

Today I have a special recipe for you to try! Yesterday I was quite bored and there’s only one thing that always saves me from boredom – baking!
I decided to come up with something new and also healthy and that’s how this amazing cake with pudding topped with some berries came to be!
Let’s get started!


1 egg
80g greek yoghurt
20g coconut oil (liquid)
100ml water
80g oat flour
20g protein powder – chocolate flavour
20g cocoa
1 tsp baking powder

1 package vanilla pudding
250g curd
berries to add on top

Preheat the oven to 180°C (about 350F). In a bowl whisk together all the dry ingredients and in a separate large mixing bowl whisk together all the wet ingredients and then pour it into the dry mixture. Then pour the batter into the cake mold (20cm diameter) and put into the oven for cca 15 mins.
For the frosting cook the pudding according to the instructions on the package. Once it is done put in the curd, mix well and then add honey to sweeten. Pour the filling on a cooled cake and top it with berries or any other fruit. Put it into the fridge for at least 2 hours and then serve!
