Healthy pancakes

Hello everybody!

Today I’d like to share with you a recipe to the best pancakes in the whole universe and what’s a plus – they’re super healthy and nutritious!

Let’s begin! 

Ingredients: 
1 ripe banana
oats (oat flour)
1 egg
stevia (optional) 
cinnamon (optional) 
coconut oil (or any other oil, eg. olive oil)

First thing you need to do is to put a banana into a bowl and smash it with a fork till it’s completely mashed. Then you add an egg, mix well and the add flour made from the oats (I usually put them into a coffee blender to make the flour) – I can’t really say how much oats is needed, however, add some then mix together and then add more till you achieve the right consistency (I can’t really describe it – not too fluid, more like a consistency of a puree). Adding a pinch of cinnamon and a few drops of stevia is optional but strongly recommended as it will make the pancakes even more delicous!
Heat some coconut oil in a pan, add the mixture and fry on a medium heat till you achieve beautiful golden pancakes (ok, I admit mine are more brown than golden but still delicious!).

To serve, put some yogurth and fruits on top (In the top picture I used hot berries and in the picture below fresh fruits)
